Meat pancakes

Meat Pancakes are a hearty and flavorful dish that combines ground meat with pancake batter. They can be served as a main course or a satisfying brunch. Here’s a simple recipe to make meat pancakes:

Meat Pancakes

Ingredients:

  • For the Meat Filling:

    • 300 g (10 oz) ground beef or pork (or a mix of both)
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1/2 teaspoon paprika
    • 1/2 teaspoon dried oregano or thyme
    • Salt and pepper, to taste
    • 1 tablespoon olive oil (for cooking the meat)
  • For the Pancake Batter:

    • 1 cup (125 g) all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 large egg
    • 1 cup (240 ml) milk
    • 2 tablespoons melted butter or vegetable oil
    • Optional: 1/4 cup (30 g) grated cheese (cheddar, Parmesan, or your choice)

Instructions:

1. Prepare the Meat Filling:

  • In a skillet, heat the olive oil over medium heat.
  • Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the ground meat, paprika, oregano or thyme, salt, and pepper. Cook, breaking up the meat with a spoon, until fully browned and cooked through. Drain any excess fat if necessary.
  • Let the meat mixture cool slightly while you prepare the pancake batter.

2. Prepare the Pancake Batter:

  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, beat the egg and then whisk in the milk and melted butter or oil.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. The batter should be somewhat lumpy. If using cheese, fold it into the batter at this point.

3. Combine Meat and Batter:

  • Gently fold the cooked meat mixture into the pancake batter until evenly distributed. Be careful not to overmix.

4. Cook the Meat Pancakes:

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  • Pour or spoon about 1/4 cup of batter onto the skillet for each pancake. Spread it slightly if needed.
  • Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes on the other side, until golden brown and cooked through.
  • Repeat with the remaining batter.

5. Serve:

  • Serve the meat pancakes warm, with your favorite sides or toppings. They go well with a simple salad, sour cream, or a dipping sauce.

Tips:

  • Add-Ins: You can add vegetables like chopped bell peppers or spinach to the meat mixture for extra flavor and nutrition.
  • Serving Suggestions: These meat pancakes can be served with a side of yogurt, a drizzle of hot sauce, or a fresh tomato salsa.
  • Storage: Leftover meat pancakes can be stored in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
